I went to the farmer's market today and found some delicious Honeycrisp apples. I bought half-a-peck. As I came home, my mouth watered for homemade apple crisp. However, I knew that it would just be me and my husband for dinner this evening, and I did not want to make a regular size apple crisp for just the two of us. BUT...Apple Crisp for Two is just right.

Ingredients
  • 2 Medium size Honeycrisp Apples (Honeycrisp apples are predominately a sweet apple with just enough tartness to make a great baking apple)
  • 2 tsp. Sugar
  • ¼ tsp. Cinnamon
  • 2 TBP Quick-Cooking Oats
  • 2 TBS Flour
  • 1 TBS Brown Sugar
  • 2 tsp. chopped Walnuts
  • 2 TBS. Cold Butter
Instructions
  1. In a bowl, combine the apples, sugar and cinnamon to coat. Transfer to two greased 6 oz baking dishes. Combine the oats, flour, brown sugar, and walnuts.
  2. Cut in butter until mixture resembles coarse crumbs. Sprinkle over apples.
  3. Bake, uncovered, at 375 degrees for 30 minutes or until bubbly and golden brown.
  4. Yield - 2 servings
  5. Serve with vanilla ice cream or warm milk.
