Southern Peach Cobbler

Went to the farmer's market yesterday and found a great deal on white peaches. (White peaches are lower in acid and taste sweeter than yellow peaches.) They looked so good I purchased 5 pounds. Then when I got home decided that Peach Cobbler would be on the menu for this evening. Gathered all utensils and ingredients.

Ingredients
  • Peaches - about 4 cups (2.5 lbs.)
  • Flour
  • Sugar
  • Baking Powder
  • Salt
  • Butter or Margarine
  • Milk
  • Egg
  • Cornstarch
  • Nutmeg
  • Brown Sugar
  • Water
  • Lemon Juice
  • Pecans
Instructions
  1. Biscuit Topping:
  2. Sift together:
  3. c. sifted all-purpose flour
  4. TBS. sugar
  5. /2 tsp. baking powder
  6. /4 tsp. salt
  7. Add to the sifted flour mixture:
  8. /4 c. butter or margarine
  9. Cut till mixtures resembles coarse crumbs.
  10. Combine:
  11. /4 c. milk
  12. egg, beaten
  13. Add to the dry mixture and stir until just moistened.
  14. Set the biscuit mixture aside.
  15. Combine in saucepan:
  16. /2 TBS. cornstarch
  17. /4 tsp ground nutmeg
  18. /2 c. brown sugar
  19. /2 c. water
  20. Cook and stir until thickened.
  21. Add:
  22. c. sliced peaches
  23. TBS lemon juice
  24. TBS butter or margarine
  25. Cook for about 5 minutes.
  26. Pour the peach filling into a round baking dish (8¼" x 1¾")
  27. Sprinkle:
  28. /4 c. chopped pecans over the peach mixture
  29. Spoon biscuit mix onto the top of the peach mixture in 6 mounds.
  30. Bake at 400 degrees for 20 to 25 minutes.
  31. Serve warm with ice cream.
